Low Temperature Options

Low temperature dish machines operate at around 120 to 140 degrees Fahrenheit. With these types of machines, sanitization is not achieved through heat, but rather the use of chemical sanitizers. Because they operate at lower temperatures, energy consumption is reduced resulting lower utility costs and these machines can be gentler and safer for delicate items. However, since detergents are required, there are additional costs associated with the purchase, storage, and handling of chemical sanitizers.

High Temperature Options

High temperature dish machines use hot water usually above 180 degrees Fahrenheit to sanitize dishes. The heat provides superior sanitization without the need for chemical sanitizers. The heat also helps speed up the dishwashing process by efficiently drying dishes, reducing the need for manual drying. However, high temperature washers require more energy, leading to higher utility bills. There is also the potential for heat damage of delicate items that cannot handle the high temperatures.
